Identification and determination of free sugars in masuku fruit (Uapaca Kirkiana), by NIA. Sufi and MT. Kaputo, Zambia Journal of Science & Technology, Vol.2, no., January 1977, Pg. 23-25.


Free sugars of the masuku fruit [Uapaca kirkiana] were analysed. The masuku juice was found to contain glucose [4.1%], fructose [2.7%], sucrose [1.5%], xylose [0.2%] and traces of ribose, raffinose and galactose. The sugars were identified by paper chromatography and were quantified by the ultraviolet absorption spectrophotometry. The total free sugar content was 8.5%.
