Utilization of pineapple waste for wine making,  Zambia Journal of Science and Technology, Vol.1, no.1, January 1976, Pg. 17-28.


Wines from pineapple waste and pineapple pulp were produced, evaluated and compared. Of three batches produced, wine from boiled pineapple waste had the best qualities and was favoured by untrained tasters. Wine from unboiled waste was found slightly better than that from pulp. The dry residue after fermentation was found suitable for animal feeding.
